The choice of wood is a delicate operation in which the cooper's experience is crucial in determining the different grains corresponding to your requirements.

 The wood is split along the grain to obtain rough staves.

The staves are stacked with care to the air-dried for a minimum 24 months, in order to purge them of the sap. |
| During his work, the cooper does a choice of the staves for the assembly of the barrel. |

The assembled barrel is placed over an intense oak fire in order to bent it. A long and slowly heating (toasting) will give an happy marriage between the barrel and the wine. |
